SWEET & SOUR PORK

Ingredie​nts

450gm Mrs. Garcia's Pork Ribs

1 tbsp ​Salt (divided)

1/4 tbsp Black Pepper

2 tbsp ​Cooking Wine

500 ml Vegetable Oil

1 clove Garlic (minced)

2 stalks Green Onion (chopped)

10gm Ginger

1 pc​ ​ ​​Red Bell Pepper (cut into chunks)

1 pc ​Green Bell Pepper (cut into chunks)

100gm ​Potato Starch (divided)

3 tbsp ​Vinegar

3 tsp ​Sugar

155 ml ​Water

1.  Begin by cleaning the pork and cutting them into bite-sized pieces. Transfer prepared pork to a bowl and marinate with salt, pepper, and cooking wine for 10 minutes.

​2.  After marinating, drain any excess liquid from ribs. Sprinkle potato starch over meat and mix thoroughly, ensuring each meat is evenly coated.

​3.  Heat vegetable oil in a wok over high heat. Fry marinated ribs for 3-5 minutes until they turn golden brown. Once done, remove ribs from heat and allow them to drain to remove excess oil.

​4.   In the same wok, discard any excess oil. Sauté green garlic, ginger, and green onion. Carefully add vinegar, sugar, half of water, and salt. Stir to combine flavors. While the sauce cooks, mix potato starch and remaining water in a small bowl. Return pork unto the wok and cook for another minute. Add bell peppers and mix well. Gradually add starch slurry to thicken the sauce to your preference. 

​5. Savor dish either on its own or atop a bed of rice.
