BEEF STEW
Ingredients
1 kg Mrs. Garcia's Beef Ribs
5 cups Water
1 pc White Onion (peeled)
5 cloves Garlic (peeled)
2 pcs Ginger (peeled)
1/4 tsp Fine Salt
4 cups Beef Stock
1/2 cup Soy Sauce
1/3 cup Brown Sugar
1 tbsp Sesame Oil
1 tbsp Sesame Seeds (toasted)
1/4 cup Onion (Sliced)
1. In a large pot, put beef ribs together with garlic, whole onion, ginger, and salt. Add water and make sure all meat pieces are immersed in water. Bring to a boil then reduce to medium heat, then cook for 30 - 45 minutes, remove the scum on top.
2. Remove beef stock and reserve its braising liquid. Set aside garlic, onion, and ginger.
3. Return meat into the pot, then add ingredients for braising liquid - beef stock, soy sauce, and brown sugar. Cover and bring to a boil, then reduce to medium heat and cook beef for about 1 to 1.5 hours or until tender.
4. Taste sauce, add more sugar or fish sauce if necessary. Then add sesame oil, toasted sesame seeds, and sliced scallions. Serve hot with Korean bean sprouts, kimchi, and rice.
