Crispy Salted Egg Pork Belly

Ingredients:

1 kg        pork belly

Salt and pepper

Oil, for deep frying

For the Salted Egg mixture

4 pcs      salted egg yolks, mashed

3 tbsp   butter

3 cloves garlic, minced

2 pcs      bird’s eye chilies, finely chopped (optional)

½ tsp     sugar

¼ tsp      white pepper

¼ cup    evaporated milk or all-purpose cream

Curry leaves (optional)

Procedure

  • Place pork belly in a pot and cover with water. Add a little salt.
  • Bring to a boil and simmer for 30 minutes until tender.
  • Drain and let dry completely. Pat skin dry with paper towels.
  • Heat oil in a deep pan.
  • Deep-fry pork belly until golden brown and crispy.
  • Remove and drain on paper towels.
  • Cut into bite-size pieces.

Salted Egg Sauce

  • Melt butter over low heat.
  • Sauté garlic, chilies, and curry leaves until fragrant.
  • Add mashed salted egg yolks and stir gently.
  • Add sugar and white pepper.
  • Pour in evaporated milk or cream.
  • Cook until thick and creamy.
  • Add fried pork belly pieces into the sauce.
  • Toss gently until evenly coated.
  • Serve immediately while hot and crispy.
