CLASSIC CEBUANO STYLE POCHERO

Stir fry
Heat oil in a pan and stir fry bananas, potatoes and chorizo then set aside.
Heat oil in a large pot and sear the whole beef brisket until browned on all sides. Add the garlic, onion, and tomatoes, then sauté until fragrant.
Pour in the water or beef stock, add the beef bouillon cubes, and bring to a boil. Skim off impurities, then cover and simmer over low heat for 2½–3 hours, or until the brisket is fork-tender. Season with fish sauce (if using), salt, and pepper.
Add the corn and potatoes and simmer for 15 minutes. Add the saba bananas and cook for another 8–10 minutes until tender.
Add the green beans, cabbage, and pechay. Cook for 3–5 minutes, just until the vegetables are crisp-tender. Then add the baked beans (optional), simmer for another 2 minutes.
Arrange the sliced brisket in a serving bowl, surround with the vegetables, and ladle the hot broth over. Garnish with chopped spring onions, fried garlic, and Cebu-style chorizo, if desired. Serve hot with steamed rice.
